Nutrition (BS) Nutrition Science

To prepare students with the scientific basis for the metabolism of nutrients and the mechanistic role of nutrients in health and disease. The student learning goals for the Nutrition Science concentration are consistent with this mission because they emphasize the importance of communication, interpretation and research. These abilities enhance the intellectual development of Nutrition Science students and prepares them for a variety of careers.

Learning Outcomes

Communication skills
Students will demonstrate effective use of oral and written communication skills.

Interpret laboratory parameters
Students will interpret laboratory parameters relating to nutrition.

Current research
Students will interpret current research and its application to clinical practice in chronic disease management.

Nutrient composition
Students will calculate and interpret nutrient composition of foods.

Life Cycle
Students will determine influence of age, growth, and normal development on nutritional requirements.

Students will describe the process of how food is digested, absorbed and metabolized.

Integration and Regulation
Students will describe the integration and regulation of metabolism of carbohydrates, lipids and proteins.
